Dynamite shrimp!

Had a craving for some of the deep fried dynamite shrimp you get at the sushi places. Took a stab at it with what I had at home (so I can continue the self isolation…)

I had some raw shrimp and wanted to make a little snack. These are peeled, deveined, dried with a paper towel and tossed with ancho chili powder, and a little cornstarch. Into the air fryer for 5 min on 400. Flip and another 2 min.

Meanwhile, I started to just add things together and totally wing a sauce.

Here is about 1 tbsp mayo, 1 tsp soy sauce, 1 tsp chili garlic sauce, 1 tsp rice wine vinegar, 1 clove of garlic grated, 1/2 tsp sugar, and green onions. Whisk together.

Toss with shrimp and eat. YUM! It was good and I’m glad I didn’t add salt. The soy makes it salty enough and the mayo kept it creamy. Give it a try!
