Weeknight hodgepodge… baked flounder and chicken legs with brussel sprouts

Sometimes you need to let the oven do the work for you while you get the house under control. This one is for my busy friends.

First, preheat the EMPTY oven at 400. I’ve left things in before and that was not fun.

While that is heating up, take a pack of chicken legs ๐Ÿ— and season with onion powder, garlic powder, steak seasoning, ancho chili powder, plus or minus any other dry spice you feel like.

I use a wire rack on top of a cookie sheet, you can also use a 13×9 pan. Line it with parchment or foil to save on your clean up.

Place in oven and set timer for 30 minutes.

Then I cut some brussel sprouts in half, tossed in EVOO and chili pepper. I put this on a baking sheet with half an onion.

Then into the oven with the chicken. About 10 minutes had passed since I got distracted with other stuff.

Then I had some white fish that I seasoned with lemon pepper salt free. I put this on top of parchment and put about 4 tbsp of white wine at the bottom.

After 30 minutes is up, turn chicken over, check to see if sprouts are done. I like them crispy and leave them in. Set timer for 15 minutes. Put fish in.

When that timer is done, everything should be done.
